Eats #8: Spinach and Goat's Cheese Risotto
This weeks number is 129, Spinach and goat’s cheese risotto. I love risotto and already make a mighty fine tomato or mushroom risotto so I’m looking forward to learning how Jamie Oliver makes his. I must admit thought I’m not a massive fan of spinach and the green colour of the risotto does put me off slightly but as they say… “the proof is in the pudding”...

Eats #7: Roasted Cauliflower
This weeks number is 342, Roasted cauliflower with cumin, coriander and almonds. Although this isn’t a meal in itself (more of an accompaniment or side dish) I’m glad it’s this weeks recipe. I’m looking forward to trying something completely different and a new take on what can be a boring vegetable. The question is What can I cook to accompany cauliflower? Perhaps one...

Update... February 2012
It’s Tuesday 7th February 2012, I’m 38 days into my challenge and so far I’ve managed to: Shoot 37 of my 366 photos. Eat 5 of my 52 recipes. Read 1 of my 12 books. The Eats, Shoots & Reads challenge keeps me busy, definitely challenges me and I’m really enjoying the process. I’m starting to rediscover a passion for cooking and my photos are improving (I...

Eats #6: Honeycomb Cannelloni
Yesterday I generated my next recipe… page 76, Honeycomb cannelloni. I can’t tell you how happy I am to be doing something other than fish! Not that I haven’t enjoyed my fish dishes, I have, and I’ve learnt some new and very tasty cooking techniques but I’m happy to be trying something different. Honeycomb cannelloni looks really tasty and is essentially a lasagna...

Reads #1: The Review...
My first book of 2012 was “The Shadow of the Wind” by Carlos Ruiz Zafón recommended to me by Nick Frampton. Nick Says… “I first read this book when I was traveling in 2009 and was totally engrossed in it from start to finish. It’s an epic story full of gothic drama and rich, engaging characters - but at the heart of the novel is an author who is in love with writing and...

Reads #2: To Kill A Mocking Bird
On finishing my previous book I discovered that the last letter, of the last word, on the last page was ‘D’. I immediately thought of my good friend Dave Sowerby, a fellow geek from Aberystywyth University. Dave’s a keen reader and even camped out at midnight for the final installments of the Harry Potter franchise - clearly an obvious choice! After some consideration he...

Reads #1: Finally Finished....
Today at 12:57pm I finally finished my first ‘Reads’ challenge, “The Shadow of the Wind” by Carlos Ruiz Zafón. I realise that finishing my book on the last day of the month is cutting it fine and I was really close to failing my challenge before it had even started. Lessons to take away from my first book: Read everyday, even a few pages. Don’t leave the book...

Eats #5: Delicious Roasted White Fish Wrapped in...
I’ve definitely come to the conclusion that my random number generator has it in for me… this weeks number is 223, Delicious roasted white fish wrapped in smoked bacon with lemon mayonnaise and asparagus. Despite really, really hoping the next recipe is anything but fish I’m looking forward to this dish. It’s simple, looks really tasty and unlike my last challenge this...

Shoots may Suffer...
This weekend I’m in Broad Haven, Pembrokeshire so my ‘Shoots’ updates will be dependent on mobile/wifi reception. Hopefully I wont disappear into a communications void but if I do I promise to take the photos on the correct day and publish them as soon as I reach civilization.

Eats #4: Prawn Cocktail
This weeks number is… 264, Prawn cocktail. Another seafood dish, how exciting… I’m starting to think my random number generator has it in for me. Despite the initial disappointment the recipe sounds OK, not very challenging but not a standard prawn cocktail either. Interesting ingredients in this challenge include Brandy, Cayenne Pepper, and something called Pangrattato.
